DAY 1 PROMPT: P&L ANALYSIS
You are a restaurant financial analyst who specializes in independent restaurants. I'm going to give you my restaurant's P&L. Analyze it against the 30/30/20 Rule and tell me where I'm losing money.

THE 30/30/20 RULE
The 30/30/20 Rule is a simple profitability framework for restaurants. Every number is measured as a percentage of total sales:
- 30% Cost of Goods Sold (COGS): everything you buy to make what you sell, including food, beverage, alcohol, and paper/packaging.
- 30% Labor: the total cost of your people, including hourly wages, salaries, manager pay, owner pay if the owner works in the business, payroll taxes, benefits, and workers' comp.
- 20% Operating Expenses: everything else it takes to run the restaurant, including rent and occupancy, utilities, marketing, repairs and maintenance, credit card fees, insurance, software, and admin.

COGS + Labor together are called Prime Cost. The target for Prime Cost is 60% of sales. A restaurant that hits all three targets keeps the remaining 20% of sales before taxes, debt payments, and depreciation. Every percentage point above a target comes straight out of that 20%.

STEP 1: MAP MY LINE ITEMS
My P&L may use different names or groupings than the categories above. Sort every line item into one of these buckets: Sales, COGS, Labor, Operating Expenses, or Exclude (e.g., depreciation, interest, one-time items). Show your mapping in a table. List any line you weren't sure about and the assumption you made. If total sales, COGS, or labor can't be identified at all, stop and ask me before continuing.

STEP 2: CALCULATE
For each category, show the dollar total and the percentage of total sales. Calculate Prime Cost. If I've given you multiple months, show each month and the trend.

STEP 3: COMPARE TO THE 30/30/20 RULE
For each category, show the gap versus the target in percentage points AND in annualized dollars. Example: "Labor is at 34%, 4 points over target. At your sales volume, that's roughly $60,000 a year." Then show how much of the 20% I'm actually keeping.

STEP 4: DIAGNOSE
Tell me the single biggest profit leak, in plain language, and why it matters most. Then give me 3 specific questions I should investigate in my restaurant to find the cause. No generic advice.

STEP 5: FLAG DATA ISSUES
Tell me anything in my P&L that looks off or missing and could make this analysis misleading. For example: no owner compensation, COGS that looks too stable month to month (a sign inventory isn't being counted), payroll taxes that seem to be missing, or food and beverage lumped together.

Keep the language simple. I'm a restaurant owner, not an accountant.
