Jeff Foster operates two restaurants on Hawaii's Big Island — Foster's Kitchen in Kailua-Kona and Big Kahuna Beach Grill in Waikoloa. He joined the P3 Mastermind roughly two years ago, bringing with him a growing multi-location business and a drive to build something that could actually scale.

Busy Restaurants, But Running on Instinct

The restaurants were full. Guests were happy. By most measures, things were going well. But Jeff knew the foundation underneath wasn't as solid as it needed to be. "I was still very much operating day to day and making a lot of decisions based on feel, instinct, instead of clear financial and leadership frameworks," he says. With growth on the horizon, flying by the seat of his pants wasn't going to cut it.

Connecting the Dots Between Sales, Labor, and Leadership

After joining P3, the fog started to lift. Jeff gained clarity across the areas that matter most — prime cost, profit per guest, menu engineering, and how to build leaders instead of just solving problems. "It really helped connect the dots between sales, labor, COGS, menu engineering, and leadership development," he says. Management meetings became sharper. His team started understanding how their decisions affected the restaurant's financial performance.

Building Systems to Scale the Right Way

The shift went deeper than operations. P3 changed how Jeff thinks about growth entirely. "Instead of just opening more restaurants, we're building systems that allow us to scale a healthier business in a more intentional way." He points to the combination of practical tools, accountability, and a community of operators committed to getting better as what makes the program worth it for anyone serious about building something sustainable.
